Duchess Sedalia's Sausage Pie

1/2 lb. sausage 2 medium onions, chopped fine
1 clove garlic, crushed 3/4 lb. mozzarella cheese, grated/shredded
4 eggs 2 oz. cream
a pinch each basil, oregano, and parsley 1 unbaked pie shell

Fry and drain the sausage.  Crumble into pie shell.  Saute the onions and garlic in some of the fat.  Add to pie.  Add the cheese.
Beat the eggs, cream, and herbs together, and pour into the pie.
Bake 35-50 minutes at 350 degrees.
Serve hot.

Notes and Variations

Tasty, but you can feel your arteries harden just inhaling it, though.  Also good for brunch.

Pseudo-period; we found this recipe in a little booklet Sedalia put together from a Twelfth Night feast.  Nothing in here isn't plausible for period, but I have no reason to believe that it is actually a period recipe.
