Quick Chicken Fajitas

Author: Justin
Serves 2-3

A package of precooked chicken, fajita flavor if possible, cut into strips 6 - 8 tortillas
2 onions, cut into strips 1 red pepper, cut into strips
Some minced garlic 1 Tbl lime or lemon juice
Dash red pepper

Reheat chicken on a baking sheet in 350 degree oven for about 5 minutes.  Wrap tortillas in tin foil, and heat in same oven.

Heat a plain (not non-stick) saute pan hotter than the blazes of hell.  Saute onion and garlic in a bit of oil, until onions start to turn translucent.  Add juice.  Add pepper and pepper and saute another moment.  Add chicken, and saute another minute, to meld everything together.

Serve with sour cream, salsa, shredded cheese and other such Tex-Mex stuff.

Notes and Variations

Obviously there's lots of room for variation here.  Far as I can tell, the crucial concept is the extremely hot, very fast saute.  Came out better than expected, but deserves further experimentation.

Made up on the "this should work" principle one night when I was feeling like fajitas.  Inspired by finding "fajita flavor" precooked chicken, which helps -- real fajita meat should be marinated for quite a long time, according to Joy of Cooking.
